Of course, we all love a good layer cake because there&#8217;s simply no beating the presentation. But sometimes, they are not so&#8230; practical. Sometimes you need a cake for a large crowd or a pot luck or a school event or simply when you won&#8217;t be able to stand guard to cut and serve a towering layer cake. Sometimes a sheet cake just makes sense. Yes, I know, I know. How can I possibly present a sheet cake to you? Especially after the fanciful <a href=\"https:\/\/thecakeblog.com\/2017\/09\/pumpkin-spice-cake.html\"><strong>Pumpkin Spice Cake<\/strong><\/a> of 2017. And the answer is always yes, with some slight modifications. So today I&#8217;ve baked our most popular <a href=\"https:\/\/thecakeblog.com\/2011\/11\/pumpkin-cupcakes-recipe.html\"><strong>pumpkin cupcake recipe<\/strong><\/a>\u00a0as a sheet cake. And in an effort to break the &#8220;sheet cake = boring&#8221; mantra, I&#8217;ve decorated it with some cute buttercream pumpkins (learn how to <a href=\"https:\/\/thecakeblog.com\/2018\/11\/pumpkin-cupcakes-8-ways.html\"><strong>pipe the buttercream pumpkins here<\/strong><\/a>). I think this would be perfect for the office Thanksgiving lunch or as a nice surprise left in the teachers&#8217; lounge. Whether it&#8217;s an over the top layer cake or a quick and simple sheet cake, it still tastes delicious! nutmeg.<\/li>\n<li id=\"instruction-step-3\">In bowl of stand mixer, beat butter, granulated sugar and brown sugar until creamy.<\/li>\n<li id=\"instruction-step-4\">Add eggs, one at a time, beating well after each addition.<\/li>\n<li id=\"instruction-step-5\">Add dry ingredients and milk, alternating until well combined. Scrape down sides of bowl as necessary.<\/li>\n<li id=\"instruction-step-6\">Mix in pumpkin puree.<\/li>\n<li id=\"instruction-step-7\">Pour batter into cake pan.<\/li>\n<li id=\"instruction-step-8\">Bake for 35-38 minutes or until toothpick inserted in center comes out clean.<\/li>\n<li id=\"instruction-step-9\">Let cake completely cool before frosting.<\/li>\n<\/ol>\n<p>Make the Cinnamon Cream Cheese Frosting:<\/p>\n<ol>\n<li id=\"instruction-step-10\">In bowl of stand mixer, beat butter and cream cheese on medium speed until well combined.<\/li>\n<li id=\"instruction-step-11\">Gradually add in confectioners\u2019 sugar one cup at a time, scraping down sides of bowl as necessary.<\/li>\n<li id=\"instruction-step-12\">Add vanilla and cinnamon and mix until combined.<\/li>\n<li id=\"instruction-step-13\">Spoon frosting all over cake and smooth with offset spatula. Pipe <a href=\"https:\/\/thecakeblog.com\/2018\/11\/pumpkin-cupcakes-8-ways.html\" rel=\"\"><strong>buttercream pumpkins<\/strong><\/a> onto cake, if desired.<\/li>\n<\/ol>\n\t\t<\/div>\n\t<\/div>\n\n\n\n\t<div class=\"tasty-recipes-notes\">\n\t\t<h3 data-tasty-recipes-customization=\"h3-color.color h3-transform.text-transform\">Notes<\/h3>\n\t\t<div class=\"tasty-recipes-notes-body\" data-tasty-recipes-customization=\"body-color.color\">\n\t\t\t<ul>\n<li>Cover cake and store in the refrigerator. Serve at room temperature.<\/li>\n<li>I used <a href=\"https:\/\/amzn.to\/2JPun92\" target=\"_blank\" rel=\"nofollow noopener\"><strong>this pan<\/strong><\/a> which came with a cover. The cover was tall enough that the buttercream pumpkins remained intact and undisturbed.
