Is 2016 totally flying by, or is it just me? I know it\u2019s not <em>technically<\/em> summer everywhere (Hi Australia!) and some places have summer all year round, but here on the west coast we\u2019re definitely kicking it into summer mode.<\/p>\n<p>Remember summer vacation as a kid? Was that not the best thing ever? Not a care in the world, just two months of pure unbridled summer joy. Crazy, right? I\u2019m pretty sure it was at Dairy Queen back in those perfect 1980\u2019s summer days. If you\u2019re not familiar with the banana split, you should really seek to amend that as soon as possible, and then try this cake! A banana split usually consists of three scoops of ice cream (chocolate, vanilla, and strawberry) served side by side in a long boat-like dish accompanied by a whole split banana along the sides. It\u2019s often topped with pineapple, strawberry, and chocolate sauces, sprinkles, whipped cream, nuts, and a maraschino cherry. Tell me that doesn\u2019t sound like pure heaven. If you\u2019re like me, you\u2019ll space it out over a couple days \u2013 make the cake layers and sauces on day 1, and finish everything off on day 2. I recommend this for sanity\u2019s sake, but you can certainly do it all in one day if you\u2019re feeling ambitious! whisk cake flour, baking powder, and salt. Set aside<\/li>\n<li id=\"instruction-step-3\">Using a stand mixer fitted with the paddle attachment, beat butter until smooth.<\/li>\n<li id=\"instruction-step-4\">Add sugar and beat on medium-high until pale and fluffy, about 2-3 minutes.<\/li>\n<li id=\"instruction-step-5\">Reduce speed and add eggs one at a time, fully incorporating after each addition. Add vanilla and mashed bananas and mix until well combined.<\/li>\n<li id=\"instruction-step-6\">Alternate adding flour mixture and buttermilk, beginning and ending with flour (3 additions of flour and 2 of milk). Fully incorporating after each addition. Do not overmix.<\/li>\n<li id=\"instruction-step-7\">Spread batter evenly into prepared pans. Smooth the top with a spatula.<\/li>\n<li id=\"instruction-step-8\">Bake for approximately 30 minutes or until a toothpick inserted into the center comes out mostly clean.<\/li>\n<li id=\"instruction-step-9\">Place cakes on wire rack to cool for 10 minutes then turn out onto wire rack to cool completely.<\/li>\n<\/ol>\n<p>Make the Buttercream Frosting:<\/p>\n<ol>\n<li id=\"instruction-step-10\">Place egg whites and sugar into the bowl of a stand mixer*, whisk until combined.<\/li>\n<li id=\"instruction-step-11\">Place bowl over a pan of simmering water to create a double-boiler. \u00a0Whisking\u00a0constantly, heat the egg mixture until it registers 160 degrees on a <a href=\"https:\/\/amzn.to\/2BO73W9\" target=\"_blank\" rel=\"nofollow noopener\"><strong>candy thermometer<\/strong><\/a>. Carefully transfer the bowl onto the stand mixer.<\/li>\n<li id=\"instruction-step-12\">Using the whisk attachment, beat the egg white mixture on high speed for 8 to 10 minutes until the bowl is no longer warm to the touch and the meringue is fluffy, glossy and holds a stiff peak.<\/li>\n<li id=\"instruction-step-13\">Switch to the paddle attachment. \u00a0With the mixer on low, slowly add cubed butter and mix until incorporated.<\/li>\n<li id=\"instruction-step-14\">Add vanilla and whip on medium-high until silky and smooth.<\/li>\n<\/ol>\n<p>Make the Strawberry Sauce:<\/p>\n<ol>\n<li id=\"instruction-step-15\">Place strawberries and sugar into a medium saucepan. Cook uncovered over medium-high heat, breaking down strawberries with a wooden spoon. Cook 5-10 minutes until softened and broken down. Cool completely before using.<\/li>\n<\/ol>\n<p>Make the Pineapple Sauce:<\/p>\n<ol>\n<li id=\"instruction-step-16\">Place all ingredients into a medium saucepan, stir to combine. Bring to a boil over medium-high heat. Cook 2-3 minutes until thickened. Cool completely before using.<\/li>\n<\/ol>\n<p>Make the Chocolate Ganache:<\/p>\n<ol>\n<li id=\"instruction-step-17\">Place chopped chocolate and cream into a microwave safe bowl. Stir to combine. Microwave for 20 seconds, stir. Microwave in 10 second intervals, stirring in between, until ganache is smooth and silky. Cool completely before using.<\/li>\n<\/ol>\n<p>Assemble the Cake:<\/p>\n<ol>\n<li id=\"instruction-step-18\">Cut each layer of cake in half horizontally.<\/li>\n<li id=\"instruction-step-19\">Place one layer of the cake onto a <a href=\"https:\/\/amzn.to\/2IlVLuW\" target=\"_blank\" rel=\"nofollow noopener\"><strong>cake stand<\/strong><\/a> or serving plate. Spread a thin layer of frosting and, using a large round tip,\u00a0<strong><a href=\"https:\/\/thecakeblog.com\/2014\/04\/how-to-build-a-cake-like-a-pro.html\">pipe a dam of frosting<\/a><\/strong>\u00a0along the top to hold the filling. Place 3 tablespoons of strawberry sauce inside the dam and spread evenly.<\/li>\n<li id=\"instruction-step-20\">Top with a second layer of cake. Spread approximately \u00bd cup of frosting on this second layer.<\/li>\n<li id=\"instruction-step-21\">Top with a third layer of cake. Spread a thin layer of frosting and pipe a dam of frosting along the top to hold the filling. Place 3 tablespoons of pineapple filling inside the dam and spread evenly.<\/li>\n<li id=\"instruction-step-22\">Top with a fourth layer of cake.
