Stir to combine.<\/li>\n<li id=\"instruction-step-8\">Fill a medium saucepan with a few inches of water and place over medium heat. \u00a0Put the mixer bowl on the top of the saucepan to create a double-boiler. While whisking, heat until the egg mixture reaches about 160 degrees on a <a href=\"https:\/\/amzn.to\/2c7NNo1\" target=\"_blank\" rel=\"nofollow\">candy thermometer<\/a>.<\/li>\n<li id=\"instruction-step-9\">Once hot, carefully return the bowl back to the mixer fitted with the whisk attachment. \u00a0Beat on high for about 7 to 10 minutes, or until the outside of the bowl returns to room temperature and the meringue holds medium peaks.<\/li>\n<li id=\"instruction-step-10\">Stop the mixer and swap out the whisk for paddle attachment. With the mixer on medium-low, add in the butter, and few tablespoons at a time. \u00a0Mix until silky smooth.<\/li>\n<li id=\"instruction-step-11\">Add in the vanilla, mint and green gel food coloring, if desired. \u00a0Mix until smooth.<\/li>\n<\/ol>\n<p><strong>Assemble the Cake:<\/strong><\/p>\n<ol>\n<li id=\"instruction-step-12\">Once the cakes are cool, trim and level the tops so that they are flat.<\/li>\n<li id=\"instruction-step-13\">Place one cake layer on a cake board or serving dish. \u00a0Spread on about 3\/4 cup mint filling. \u00a0Top with the next layer of cake and repeat.<\/li>\n<li id=\"instruction-step-14\">Crumb coat the cake with the mint filling, then refrigerate to set &#8211; about 10 minutes.<\/li>\n<li id=\"instruction-step-15\">Stir in 1 1\/4 to 1 1\/2 cups crushed chocolate sandwich cookies into the remaining mint filling.<\/li>\n<li id=\"instruction-step-16\">Frost the outside of the cake with the cookie-studded icing.<\/li>\n<\/ol>\n<p><strong>Make the Glaze:<\/strong><\/p>\n<ol>\n<li id=\"instruction-step-17\">Place the chocolate, cream, and corn syrup in a saucepan and heat over medium-high heat. \u00a0Being careful not to scorch the cream, heat until the cream begins to steam and the chocolate starts to melt.<\/li>\n<li id=\"instruction-step-18\">Remove from the heat, whisk until smooth. \u00a0Let cool.<\/li>\n<li id=\"instruction-step-19\">Once glaze is completely cool but still pourable, lightly drizzle over the top of the cake, letting it drip down the sides.<\/li>\n<li id=\"instruction-step-20\">Once the glaze sets, decorate the top with any remaining buttercream and mini chocolate sandwich cookies.<\/li>\n<\/ol>\n\t\t<\/div>\n\t<\/div>\n\n\n\n\t<div class=\"tasty-recipes-notes\">\n\t\t<h3 data-tasty-recipes-customization=\"h3-color.color h3-transform.text-transform\">Notes<\/h3>\n\t\t<div class=\"tasty-recipes-notes-body\" data-tasty-recipes-customization=\"body-color.color\">\n\t\t\t<p>If at any point the buttercream appears curdled, just keep mixing.
