<strong><a title=\"Pie Crust Cookies\" href=\"https:\/\/thecakeblog.com\/2014\/12\/pie-crust-cookies.html\">these super delish Pie Crust Cookies<\/a><\/strong> &#8211; oh my goodness are they good.\u00a0 While definitely hard to beat, I wanted to give a little love to a tradition that comes from my side of the family.\u00a0 My family is a tad more chocolate focused when it comes to Christmas goodies.\u00a0 As in, we dip anything and everything into chocolate and viola, Christmas dessert!\u00a0 Pretzels, raisins, nuts, Oreos and on and on.\u00a0 All this dipping started back in the 80&#8217;s when we were kids and the list of things we wanted to smother in chocolate seemed to grow from year to year.\u00a0 The one staple that always made the must-dip-in-chocolate list?\u00a0 Peanut Butter Balls!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-22938 size-full\" src=\"https:\/\/thecakeblog.com\/wp-content\/uploads\/2014\/12\/peanut_butter_ball_cake_3.jpg\" alt=\"Chocolate Peanut Butter Cake - moist chocolate cake paired with peanut butter frosting and filling, topped with drippy chocolate ganache and homemade peanut butter balls, aka buckeyes | Carrie Sellman for TheCakeBlog.com\" width=\"600\" height=\"930\" srcset=\"https:\/\/thecakeblog.com\/wp-content\/uploads\/2014\/12\/peanut_butter_ball_cake_3.jpg 600w, https:\/\/thecakeblog.com\/wp-content\/uploads\/2014\/12\/peanut_butter_ball_cake_3-387x600.jpg 387w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/p>\n<p>My mother, two sisters and I made chocolate covered peanut butter balls every. single. year. growing up.\u00a0 Ah, the memories of sticky hands from rolling peanut butter into tiny balls and then hovering around the double boiler with my sisters, dipping our peanut butter balls into the melted chocolate&#8230; hoping they didn&#8217;t fall off the toothpick and drown in the chocolate.\u00a0 Inevitably, someone would complain that the other peanut butter balls were too messy.\u00a0 I cannot confirm nor deny that crazy person was me &#8212; Butter Balls:<\/p>\n<ol>\n<li id=\"instruction-step-1\">Using an electric mixer, blend peanut butter and butter together until smooth.<\/li>\n<li id=\"instruction-step-2\">Add vanilla and then powdered sugar.\u00a0 Mix to combine.<\/li>\n<li id=\"instruction-step-3\">Roll peanut butter into round balls and place onto a cookie tray lined with parchment paper.\u00a0 Refrigerate until cold.<\/li>\n<li id=\"instruction-step-4\">Melt chocolate in a double boiler over low heat or in a microwave in 30 second intervals, stirring after each heating.<\/li>\n<li id=\"instruction-step-5\">Using a toothpick, dip peanut butter balls into chocolate to coat.\u00a0 Place back onto parchment paper.\u00a0 Refrigerate until chocolate is set.<\/li>\n<li id=\"instruction-step-6\">Store in the refrigerator until ready to use or eat.<\/li>\n<\/ol>\n<p>Make the Chocolate Cake:<\/p>\n<ol>\n<li id=\"instruction-step-7\">Preheat oven to 350 degrees. \u00a0Put a kettle of water on to boil.\u00a0 Butter and lightly flour three 8&#8243; round pans.<\/li>\n<li id=\"instruction-step-8\">In a large mixing bowl combine dry ingredients: sugar, flour, cocoa, baking powder, baking soda and salt.<\/li>\n<li id=\"instruction-step-9\">Add in eggs, milk, oil, vanilla and espresso powder.\u00a0 Mix on medium speed for two minutes.<\/li>\n<li id=\"instruction-step-10\">Add boiling water and mix to combine.<\/li>\n<li id=\"instruction-step-11\">Divide batter evenly between three prepared pans.\u00a0 Bake 30 to 35 minutes.\u00a0 Cake is done with a toothpick inserted in center comes out clean.<\/li>\n<li id=\"instruction-step-12\">Cool 10 minutes before inverting cakes from pans.\u00a0 Cool completely before assembling cake.\u00a0 Wrap in plastic wrap and refrigerate if not using until tomorrow.<\/li>\n<\/ol>\n<p>Make the Peanut Butter Frosting:<\/p>\n<ol>\n<li id=\"instruction-step-13\">In the bowl of a stand mixer, beat butter and peanut butter on medium speed until well combined.<\/li>\n<li id=\"instruction-step-14\">Add vanilla and salt.\u00a0 Mix again.<\/li>\n<li id=\"instruction-step-15\">Mix in powdered sugar in several batches.<\/li>\n<li id=\"instruction-step-16\">Add milk and whip until fluffy.<\/li>\n<\/ol>\n<p>Make the Chocolate Ganache:<\/p>\n<ol>\n<li id=\"instruction-step-17\">Place chocolate chips into medium bowl and set aside.\u00a0 Heat cream in a saucepan over medium-high heat just until it almost starts to simmer.\u00a0 Remove from heat and pour over chocolate.\u00a0 Let sit for about 5 minutes and then stir with a wooden spoon until chocolate is completely melted and smooth.\u00a0 Stir in corn syrup.<\/li>\n<\/ol>\n<p>Assemble the Cake:<\/p>\n<ol>\n<li id=\"instruction-step-18\">Fill a piping bag fitted with a large star tip with one cup of frosting and set aside.<\/li>\n<li id=\"instruction-step-19\">Place one layer of cake onto serving plate or cake stand and top with about one cup of frosting.\u00a0 Repeat with second cake layer, more frosting and then last cake layer.\u00a0 Crumb coat and frost cake with remaining peanut butter frosting.\u00a0 Refrigerate for 20 minutes or until frosting is set.\u00a0 Drizzle chocolate ganache over the top with small drips overflowing the edge.\u00a0 Smooth as desired with offset spatula.\u00a0 Refrigerate for 20 minutes or until ganache is set.<\/li>\n<li id=\"instruction-step-20\">Using your reserved frosting, pipe 8 small swirls of frosting evenly spaced around the edge of cake.\u00a0 Top each swirl with a peanut butter ball.<\/li>\n<li id=\"instruction-step-21\"><\/li>\n<\/ol>\n\t\t<\/div>\n\t<\/div>\n\n\n\n\t<div class=\"tasty-recipes-notes\">\n\t\t<h3 data-tasty-recipes-customization=\"h3-color.color super delish Pie Crust Cookies &#8211; oh my goodness are they good.  While definitely hard to beat, I wanted to give a little love to a tradition that comes from my side of the family.  My family is a tad more chocolate focused when it comes to Christmas goodies.  As in, we dip anything and everything into chocolate and viola, Christmas desserts!  Pretzels, raisins, nuts, Oreos and on and on.  All this dipping started back in the 80&#8217;s when we were kids and the list of things we wanted to smother in chocolate seemed to grow from year to year.  The one staple that always made the must-dip-in-chocolate list?
