Gingerbread cake, espresso buttercream and toffee bits, perfect for holiday parties and Christmas dessert | by Tessa Huff for TheCakeBlog.com\" width=\"600\" height=\"870\" srcset=\"https:\/\/thecakeblog.com\/wp-content\/uploads\/2013\/12\/gingerbread_latte_cake_41.jpg 600w, https:\/\/thecakeblog.com\/wp-content\/uploads\/2013\/12\/gingerbread_latte_cake_41-400x580.jpg 400w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p><strong>GINGERBREAD LATTE CAKE<\/strong><br \/>\na recipe by <a href=\"https:\/\/thecakeblog.com\/tessa-huff\">Tessa Huff<\/a><\/p>\n<p><em>For the Gingerbread Cake:<\/em><\/p>\n<p>3 cups all purpose flour<br \/>\n2 teaspoons ground ginger<br \/>\n2 teaspoon cinnamon<br \/>\n1 1\/2 teaspoons salt<br \/>\n1 teaspoon baking powder<br \/>\n1 teaspoon baking soda<br \/>\n1 cup unsalted butter, softened<br \/>\n1 cup brown sugar, packed<br \/>\n2 large eggs<br \/>\n1 cup molasses<br \/>\n1 tablespoon freshly grated ginger<br \/>\n1 1\/4 cups milk<\/p>\n<ol>\n<li>Preheat oven to 350 degrees. \u00a0Butter and flour three 6 inch pans and set aside.<\/li>\n<li>Sift together flour, ginger, cinnamon, salt, baking powder and baking soda. \u00a0Set aside.<\/li>\n<li>Place butter in the bowl of an electric mixer and beat on medium-high for 3-5 minutes.<\/li>\n<li>Add in the brown sugar and mix together on medium speed.<\/li>\n<li>On medium-low, add in the eggs one at a time followed by the molasses. \u00a0Mix until incorporated.<\/li>\n<li>Add in the grated ginger.<\/li>\n<li>Stop the mixer and scrape down the sides and bottom of the bowl.<\/li>\n<li>Alternating between dry and wet, add in the flour mixture and milk in 3 additions on low speed.<\/li>\n<li>Once mixed, divide the batter evenly between the three pans.<\/li>\n<li>Bake 20-22 minutes, or until done.<\/li>\n<li>Cool on a wire rack before de-panning.<\/li>\n<li>Once completely cool, carefully slice each cake in half to create 6 layers.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><em>For the Espresso Buttercream:<\/em><\/p>\n<p>6 egg whites<br \/>\n2 cups granulated sugar<br \/>\n2 1\/2 cups unsalted butter, softened<br \/>\n2 teaspoons vanilla extract<br \/>\n1 teaspoon instant espresso powder<br \/>\n2 ounces hot water<\/p>\n<ol>\n<li>Place the egg whites and sugar in the bowl of an electric mixer. \u00a0Whisk together slightly.<\/li>\n<li>Create a double boiler by placing the mixing bowl on top of a medium saucepan of water. \u00a0Heat on medium-high.<\/li>\n<li>While whisking, heat the egg white mixture until 160 degrees on a candy thermometer.<\/li>\n<li>Once hot, transfer the mixing bowl back to the electric mixer. \u00a0With the whisk attachment, mix on high for about 8-10 minutes, or until the bowl of the mixer returns to room temperature. \u00a0Stop the mixer and swap out the whisk for the paddle attachment.<\/li>\n<li>With the mixer of medium speed, add in the butter, a few tablespoons at a time.<\/li>\n<li>Add in the vanilla and continue to mix until smooth.<\/li>\n<li>Meanwhile, dissolve the espresso powder into the hot water.<\/li>\n<li>Once the buttercream is done mixing, divide in half. \u00a0Reserve half for icing the cake.<\/li>\n<li>Mix in the expresso into the second half of the buttercream. \u00a0Feel free to make the espresso flavor stronger by dissolving more powder into the 2 ounces of water.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><em>Assembly:<\/em><\/p>\n<p>Layer the gingerbread cake with a thin layer of espresso buttercream. \u00a0On every other layer, sprinkle with bits of toffee. \u00a0Ice the cake with the remaining half of the vanilla buttercream.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter wp-image-22535 size-full\" src=\"https:\/\/thecakeblog.com\/wp-content\/uploads\/2013\/12\/gingerbread_latte_cake_51.jpg\" alt=\"Gingerbread Latte Cake!
