By Tessa Huff for TheCakeBlog.com\" width=\"546\" height=\"764\" \/><\/p>\n<p>I have a love-hate relationship with pears. \u00a0When they are ripe, they are the most beautiful, juicy, and flavorful treats. \u00a0Any other time, they fall completely flat. \u00a0For this recipes, I decided to put our differences aside, and give some TLC to some pears.<\/p>\n<p>When it comes to the dessert menu, I hardly ever understood why anyone would ever chose a poached pear or cheese plate over decadent cheesecake or gooey chocolate cake. \u00a0While I still don&#8217;t know why cheese finds its place among these sweet treats, I think I finally understand the beauty of a poached pear. \u00a0Taking the time to basically make a sweet, cinnamon-y jacuzzi for your pears definitely pays off. \u00a0Poaching pears definitely alleviates some of that heartache when they are not perfectly ripe. \u00a0The pears become sweet, tender, and can be infused with whatever flavor you&#8217;d like. \u00a0Plus, it will leave your kitchen smelling absolutely amazing!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"left alignnone\" src=\"https:\/\/thecakeblog.com\/wp-content\/uploads\/2013\/11\/cranberry_pear_cake_1.jpg\" alt=\"Pear &amp; Cranberry Cake! By Tessa Huff for TheCakeBlog.com\" width=\"546\" height=\"390\" \/><\/p>\n<p><strong>\u00a0PEAR &amp; CRANBERRY CAKE<\/strong><br \/>\na recipe by <a href=\"https:\/\/thecakeblog.com\/tessa-huff\">Tessa Huff<\/a><\/p>\n<p><em>For the Poached Pears:<\/em><\/p>\n<p>3 fresh pears<br \/>\n1 cup sugar<br \/>\n2 cinnamon sticks<\/p>\n<ol>\n<li>Place 1 cup sugar and 4 cups water with the cinnamon sticks in a medium saucepan and bring to a boil.<\/li>\n<li>Meanwhile, peal the pears.<\/li>\n<li>Once the liquid reaches a boil, add the pears and turn heat to medium-low.<\/li>\n<li>Simmer pears about 10-15 minutes, or until soft.<\/li>\n<li>Remove from poaching liquid, core, and chop.<\/li>\n<li>Reserve 1\/4 cup of the poaching liquid.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><em>For the Pear &amp; Cranberry Cake:<\/em><\/p>\n<p>3 cups all purpose flour<br \/>\n1 teaspoons cinnamon<br \/>\n1 teaspoon cardamon<br \/>\n1\/4 teaspoon clove<br \/>\n1 teaspoon salt<br \/>\n1 teaspoon baking soda<br \/>\n1\/2 cup unsalted butter, softened<br \/>\n1\/2 cup grapeseed oil (or canola)<br \/>\n1 cup granulated sugar<br \/>\n1 cup packed brown sugar<br \/>\n3 eggs<br \/>\n1 1\/4 cup fresh or frozen cranberries<\/p>\n<ol>\n<li>Sift together the flour, cinnamon, cardamon, clove, salt and baking soda. Set aside.<\/li>\n<li>In the bowl of an electric mixer, cream together the butter, oil, granulated sugar and brown sugar. \u00a0Mix about 5 minutes on medium-high.<\/li>\n<li>With the mixer on low, add in the eggs one at a time. \u00a0Scrape down the bowl.<\/li>\n<li>With the mixer on low, carefully alternate in the dry ingredients and the 1\/4 cup reserved poaching liquid in two batches.<\/li>\n<li>Fold in the chopped pears and cranberries.<\/li>\n<li>Pour batter into prepared pans.<\/li>\n<li>Bake at 350 until centers are done (about 24 minutes for 4 X 6inch pans).<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><em>For the Mascarpone Frosting:<\/em><\/p>\n<p>3\/4 cup unsalted butter, softened<br \/>\n3\/4 cup mascarpone, softened<br \/>\n5 cups sifted confectioner&#8217;s sugar<br \/>\n1\/4 cup milk<br \/>\n1 teaspoon vanilla extract<br \/>\n2 teaspoons lemon zest<\/p>\n<ol>\n<li>Cream the butter and mascarpone with an electric mixer.<\/li>\n<li>Carefully add in the remaining ingredients and mix until light and creamy.<\/li>\n<\/ol>\n<p><em>To Assemble Cake:<\/em><br \/>\nStack cake layers alternating with the mascarpone frosting.
