So tempting that you might have a hard time resisting these Lemon Blueberry Cupcakes.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"left\" src=\"https:\/\/thecakeblog.com\/wp-content\/uploads\/2013\/05\/lemon_blueberry_cupcakes_2.jpg\" alt=\"Lemon Blueberry Cupcake Recipe | TheCakeBlog.com\" width=\"546\" height=\"816\" \/><\/p>\n<p><strong>LEMON BLUEBERRY CUPCAKES<\/strong><br \/>\na recipe by <a title=\"Carrie Sellman\" href=\"https:\/\/thecakeblog.com\/about\">Carrie Sellman<\/a><br \/>\n<em>{makes 30 cupcakes}<\/em><\/p>\n<p>3 cups cake flour + extra for coating blueberries<br \/>\n2 teaspoons baking powder<br \/>\n1\/2 teaspoon salt<br \/>\n8 ounces unsalted butter, room temperature<br \/>\n2 cups sugar<br \/>\n4\u00a0eggs<br \/>\n2\u00a0teaspoons vanilla extract<br \/>\nzest of 1 organic lemon<br \/>\n1 cup whole milk<br \/>\n1 1\/2 cup blueberries<\/p>\n<ol>\n<li>Preheat oven to 350.\u00a0 Line muffin tins with cupcake wrappers.\u00a0 This recipe makes 30 cupcakes.<\/li>\n<li>Sift together flour, baking powder and salt. Set aside.<\/li>\n<li>Gently toss blueberries with a light coating of flour.\u00a0 Set aside.<\/li>\n<li>In the bowl of a stand mixer, beat butter and sugar on medium-high using the paddle attachment.\u00a0 Beat until pale and fluffy, about 4 minutes.<\/li>\n<li>With the mixer on low, add eggs one at a time.\u00a0 Mix well after each egg.<\/li>\n<li>Add vanilla extract and lemon zest.\u00a0 Mix to combine.<\/li>\n<li>Add one third of your dry ingredients and mix on low, just until combined.<\/li>\n<li>Add one half of your milk.\u00a0 Mix gently.<\/li>\n<li>Add in remaining ingredients, alternating dry, wet, dry.\u00a0 Do not over mix.<\/li>\n<li>Using a spoon or spatula, gently fold blueberries into batter, being careful not to break berries.<\/li>\n<li>Fill cupcake liners 2\/3 full with batter.<\/li>\n<li>Bake 17-20 minutes or until toothpick inserted in center comes out clean.<\/li>\n<li>Let cupcakes cool in pan for 5 minutes, then remove to wire rack until completely cool.<\/li>\n<\/ol>\n<p><em>For the Lemon Cream Cheese Frosting:<\/em><\/p>\n<p>16 ounces cream cheese, softened<br \/>\n8 ounces unsalted butter, room temperature<br \/>\n2 pounds confectioners sugar<br \/>\n1 teaspoon vanilla extract<br \/>\n1 organic lemon, zest and juice<\/p>\n<ol>\n<li>Using a stand mixer fitted with the paddle attachment, mix the butter and cream cheese until smooth.<\/li>\n<li>Add vanilla, lemon zest and juice and mix until combined.<\/li>\n<li>Gradually add confectioners sugar until completely combined. Scrape down the sides of the bowl.
