{"id":15623,"date":"2013-05-09T06:23:20","date_gmt":"2013-05-09T10:23:20","guid":{"rendered":"https:\/\/thecakeblog.com\/?p=15623"},"modified":"2017-03-28T07:44:27","modified_gmt":"2017-03-28T11:44:27","slug":"recipe-creamsicle-cupcakes","status":"publish","type":"post","link":"https:\/\/thecakeblog.com\/2013\/05\/recipe-creamsicle-cupcakes.html","title":{"rendered":"Creamsicle Cupcakes"},"content":{"rendered":"<p style=\"text-align: center;\">Our contributor, Lauren Kapeluck of <a title=\"EllenJay Events\" href=\"https:\/\/www.ellenjayevents.com\/\" target=\"_blank\">EllenJay Events<\/a>, is back with a delicious new recipe&#8230;.<\/p>\n<p>It might only be May but the ice cream man has been driving down my street for well over a month now.\u00a0 Every time I hear his musical truck all I can think about are drumsticks, ice cream sandwiches and popsicles.\u00a0 It reminds me that the warm weather is here to stay and it&#8217;s time to start stocking my freezer full of cool summer treats!\u00a0 So thank you Mr. Ice Cream Man for inspiring me to create these <b>Creamsicle Cupcakes<\/b> based off of one of my all time favorite popsicle treats.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-24329\" src=\"https:\/\/thecakeblog.com\/wp-content\/uploads\/2013\/05\/creamsicle_cupcake_11.jpg\" alt=\"Creamsicle Cupcake Recipe | by Lauren Kapeluck for TheCakeBlog.com\" width=\"600\" height=\"830\" srcset=\"https:\/\/thecakeblog.com\/wp-content\/uploads\/2013\/05\/creamsicle_cupcake_11.jpg 600w, https:\/\/thecakeblog.com\/wp-content\/uploads\/2013\/05\/creamsicle_cupcake_11-400x553.jpg 400w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/p>\n<p>I took a shortcut with this recipe and used a vanilla box mix as the base, but don&#8217;t worry it is packed full of all kinds of orange citrus goodness that you won&#8217;t be able to tell once you take a bite.\u00a0 Orange juice and orange zest are used in both the cake and cream cheese icing which really creates a lovely refreshing citrus taste.\u00a0 These cupcakes are really moist and super light, so don&#8217;t be surprised if you find yourself eating more than one at a time.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-24331\" src=\"https:\/\/thecakeblog.com\/wp-content\/uploads\/2013\/05\/creamsicle_cupcake_31.jpg\" alt=\"Creamsicle Cupcake Recipe | by Lauren Kapeluck for TheCakeBlog.com\" width=\"600\" height=\"510\" srcset=\"https:\/\/thecakeblog.com\/wp-content\/uploads\/2013\/05\/creamsicle_cupcake_31.jpg 600w, https:\/\/thecakeblog.com\/wp-content\/uploads\/2013\/05\/creamsicle_cupcake_31-400x340.jpg 400w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/p>\n<p>To decorate I wanted to mimic the traditional Creamsicle popsicle so I used an apple corer to remove the center of the cupcake and added a white cream cheese filling. Orange cream cheese frosting was swirled on top and then one more dollop of white cream cheese icing was added to the center.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-24334\" src=\"https:\/\/thecakeblog.com\/wp-content\/uploads\/2013\/05\/creamsicle_cupcake_recipe1.jpg\" alt=\"Creamsicle Cupcake Recipe | by Lauren Kapeluck for TheCakeBlog.com\" width=\"600\" height=\"2700\" srcset=\"https:\/\/thecakeblog.com\/wp-content\/uploads\/2013\/05\/creamsicle_cupcake_recipe1.jpg 600w, https:\/\/thecakeblog.com\/wp-content\/uploads\/2013\/05\/creamsicle_cupcake_recipe1-133x600.jpg 133w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/p>\n<p>These cupcakes would be perfect for a summer pool party or a citrus theme birthday bash.\u00a0 Add a scoop of vanilla ice cream along side and you&#8217;ve got one yummy treat!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-24330\" src=\"https:\/\/thecakeblog.com\/wp-content\/uploads\/2013\/05\/creamsicle_cupcake_21.jpg\" alt=\"Creamsicle Cupcake Recipe | by Lauren Kapeluck for TheCakeBlog.com\" width=\"600\" height=\"510\" srcset=\"https:\/\/thecakeblog.com\/wp-content\/uploads\/2013\/05\/creamsicle_cupcake_21.jpg 600w, https:\/\/thecakeblog.com\/wp-content\/uploads\/2013\/05\/creamsicle_cupcake_21-400x340.jpg 400w\" sizes=\"auto, (max-width: 600px) 100vw, 600px\" \/><\/p>\n<p><b>CREAMSICLE CUPCAKES<\/b><br \/>\nrecipe by <a href=\"https:\/\/thecakeblog.com\/about\/lauren\/\">Lauren Kapeluck<\/a><br \/>\n(makes 24)<\/p>\n<p><i>For the Cupcakes:<\/i><\/p>\n<p>1 box white cake mix (dry)<br \/>\n3oz box orange gelatin (dry)<br \/>\nEggs<br \/>\nOil<br \/>\nWater<br \/>\n1\/4 cup orange juice<br \/>\n1 tsp orange extract<br \/>\n1 tsp orange zest<\/p>\n<ol>\n<li>Preheat oven to 350 degrees and line muffin pans with cupcake liners.<\/li>\n<li>In the bowl of a stand mixer, combine dry cake mix and dry orange gelatin.<\/li>\n<li>Measure out the water, using the amount shown on the cake mix box.\u00a0 Do NOT pour it into the mixing bowl yet!\u00a0 First, remove 1\/4 cup of the water and replace it with 1\/4 cup orange juice.\u00a0 Now pour it into the mixing bowl.<\/li>\n<li>Add in eggs and oil, using the exact amounts shown on the cake mix box.<\/li>\n<li>Add in orange extract and orange zest.<\/li>\n<li>Beat on medium speed for 2 minutes until well combined. Scrape sides of bowl as necessary.<\/li>\n<li>Fill cupcake liners 2\/3 full with batter.<\/li>\n<li>Bake for 18-20 minutes or until toothpick inserted in center comes out clean.<\/li>\n<li>Let cupcakes cool in pans for 5 minutes, then remove to wire racks to finish cooling.<\/li>\n<li>Once cupcakes are completely cool, hollow out the center using an apple corer.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><i>For the Frosting:<\/i><\/p>\n<p>1 cup unsalted butter, room temperature<br \/>\n8 ounces cream cheese, softened<br \/>\n5 cups confectioner&#8217;s sugar<br \/>\n1 teaspoon orange extract<br \/>\n1\/2 teaspoon vanilla extract<br \/>\n1 tablespoon orange zest<br \/>\norange food coloring<\/p>\n<ol>\n<li>In bowl of stand mixer fitted with the paddle attachment, beat butter and cream cheese until smooth and creamy.<\/li>\n<li>Gradually add in confectioner&#8217;s sugar 1 cup at a time and beat well, scraping down sides of bowl.<\/li>\n<li>Add extracts and mix well for about 2 minutes.<\/li>\n<li>Remove 1 cup of icing and set aside.\u00a0 This will be used as white cream center inside the cupcakes.<\/li>\n<li>Add orange zest to the remaining icing.\u00a0 Add orange food coloring, one drop at a time, until you reach the desired shade of orange.<\/li>\n<\/ol>\n<p>&nbsp;<\/p>\n<p><em>To Assemble Cupcakes:<\/em><\/p>\n<ol>\n<li>Spoon white frosting into a piping bag fitted with a large round tip.\u00a0 Spoon orange frosting into a seperate piping bag fitted with a large round tip.<\/li>\n<li>Fill center of each cupcake with white frosting.<\/li>\n<li>Use orange frosting and swirl around the center of the cupcake two times.
