Learn how to make this springy Easter cake with a step-by-step tutorial | by Carrie Sellman for TheCakeBlog.com\" width=\"546\" height=\"816\" \/><\/p>\n<p>Before we get started on the <em>very scientific<\/em> speckling technique, let&#8217;s talk about the cake itself.\u00a0 I used a Classic Vanilla Cake recipe and baked it as four layers.\u00a0 You can bake your cakes several days in advance and either freeze them or keep them in the refrigerator.\u00a0 Being a mom to a little one means my windows of time are quite short.\u00a0 So on Day #1, I baked the cake and made the eggs.\u00a0 Day #2, I made a batch of basic buttercream icing (<a title=\"Basic Buttercream Icing Recipe\" href=\"https:\/\/thecakeblog.com\/basic-buttercream-icing\">recipe here<\/a>).\u00a0 Day #3, I assembled and decorated the cake.\u00a0 You, by no means, have to follow my extra prolonged, toddler-approved schedule.\u00a0 But if needed, you can certainly spread this project out over several days.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"left aligncenter\" src=\"https:\/\/thecakeblog.com\/wp-content\/uploads\/2013\/02\/speckled_egg_cake_2.jpg\" alt=\"The original Speckled Egg Cake! Learn how to make this springy Easter cake with a step-by-step tutorial | by Carrie Sellman for TheCakeBlog.com\" width=\"546\" height=\"815\" \/><\/p>\n<p>Now, let&#8217;s talk about the eggs!\u00a0 There are several ways you could go about making these eggs.\u00a0 You can use an egg-shaped candy mold to create white chocolate eggs, colored appropriately.\u00a0 You can use real eggs that are hard boiled (or blown out) and then dyed. {Please do not use raw eggs&#8230; that is just asking for trouble.}\u00a0 You can shape eggs out of fondant or gumpaste.\u00a0 Or you can simply purchase any speckled candy eggs that you like.\u00a0 Whichever route you pick, this is your first step in decorating. Learn how to make this springy Easter cake with a step-by-step tutorial | by Carrie Sellman for TheCakeBlog.com\" width=\"546\" height=\"3081\" \/><\/a><\/p>\n<p><strong>SPECKLED EGG CAKE<\/strong><br \/>\na tutorial by <a title=\"Carrie Sellman\" href=\"https:\/\/thecakeblog.com\/about\">Carrie Sellman<\/a><\/p>\n<p><em>Supplies<\/em><\/p>\n<ul>\n<li>cake of choice, assembled and crumb-coated<\/li>\n<li><a title=\"Basic Buttercream Icing Recipe\" href=\"https:\/\/thecakeblog.com\/basic-buttercream-icing\"><strong>basic buttercream icing<\/strong><\/a><\/li>\n<li><a href=\"https:\/\/amzn.to\/2CeEOj2\" target=\"_blank\" rel=\"nofollow noopener noreferrer\"><strong>Sky blue food color<\/strong><\/a><\/li>\n<li>1 tablespoon cocoa powder<\/li>\n<li>1 1\/2 tablespoon vanilla extract<\/li>\n<li><a href=\"https:\/\/amzn.to\/2M40e6W\" target=\"_blank\" rel=\"nofollow noopener noreferrer\"><strong>food grade paint brush<\/strong><\/a><\/li>\n<li>wax paper<\/li>\n<li>paper towels, for clean up<\/li>\n<li>speckled eggs<\/li>\n<\/ul>\n<p><strong>STEP 1:<\/strong>\u00a0 Color your buttercream frosting with a few drops of food coloring.\u00a0 I used 2-3 drops of <strong><a title=\"Americolor Sky Blue\" href=\"https:\/\/amzn.to\/2CeEOj2\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">Americolor Sky Blue gel<\/a><\/strong>.\u00a0 When tinting buttercream, I like to add one drop of color at a time until I reach the right shade.\u00a0 If you&#8217;ve ever ruined a batch of icing before, you already know the benefit of adding color gradually.\u00a0 And when in doubt, I like to error on the light side.\u00a0 Buttercream naturally darkens slightly as it sets.<\/p>\n<p><strong>STEP 2:<\/strong>\u00a0 Frost your assembled and crumb-coated cake with your pretty blue buttercream.\u00a0 Smooth and shape to your liking.\u00a0 It does not have to be perfect.\u00a0 We&#8217;re about to splatter it up!<\/p>\n<p><strong>STEP 3:<\/strong>\u00a0 In a small bowl, mix together 1 tablespoon of cocoa powder with 1 1\/2 tablespoons of vanilla extract.\u00a0 Stir well until cocoa is completely dissolved and you have a thin, chocolate paint.<\/p>\n<p><strong>STEP 4:<\/strong>\u00a0 Cover your work area with wax paper.\u00a0 Lightly dip your new (or totally clean, never used for paint) paintbrush into the chocolate.\u00a0 Holding the paint brush with one hand, gently flick the bristles with your other index finger to splatter the chocolate paint.\u00a0 Practice first onto your wax paper until you get the hang of it.\u00a0 No need to move on to the cake until you master the flick.\u00a0 When you&#8217;re ready to start speckling, hold the paintbrush fairly close to the cake and start splattering.<\/p>\n<p><strong>NOTE:<\/strong> A little chocolate paint goes a long way.\u00a0 So dip your brush lightly.\u00a0 If your paintbrush becomes &#8216;clogged&#8217; with paint and is no longer splattering nicely, rinse it with water.\u00a0 Dry with a paper towel.\u00a0 And start again.<\/p>\n<p><strong>STEP 5:<\/strong>\u00a0 Keep splattering away!\u00a0 Move up, down and all around to completely cover the cake.<\/p>\n<p><strong>NOTE:<\/strong>\u00a0 As you work, you will undoubtedly get a splatter that is bigger than you would prefer.\u00a0 Or accidentally get carried away and bump the cake with your paintbrush.\u00a0 (Don&#8217;t ask me how I know this!)\u00a0 You have two options here.\u00a0 Either embrace the imperfections and let it go.\u00a0 Or wipe it off quickly with a light dab of water and paper towel.\u00a0 Then go back to speckling.\u00a0 If you look closely, you can see where I wiped one of my oh-no-it&#8217;s-too-big splatters.\u00a0 Left-middle.\u00a0 Not too bad of a correction and I think it adds to the speckled egg charm.<\/p>\n<p><strong>STEP 6:<\/strong>\u00a0 Now that you have the hang of splattering, you&#8217;ll also speckle the eggs you previously made.\u00a0 While you wait for the cake and the eggs to dry, now is a good time to wipe off any stray splatters on your cake pedestal.\u00a0 Once both the eggs and the cake are completely dry, arrange eggs on top of cake.\u00a0 Use a dab of buttercream to hold them exactly where you want them.<\/p>\n<p><strong>STEP 7:<\/strong>\u00a0 Cut, eat and enjoy!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-32816\" src=\"https:\/\/thecakeblog.com\/wp-content\/uploads\/2013\/02\/speckled-easter-egg-cake-1.jpg\" alt=\"The original Speckled Egg Cake!
