As I was browsing the champagne section at the store, I decided on Korbel Sweet Rose. Korbel is a pretty popular and affordable brand when it comes to champagne and I was drawn to the fact that they had a pink variety with a hint of raspberries, which was absolutely perfect for what I had in mind for these cupcakes! The cake turned out super moist and paired perfectly with a light and fluffy raspberry champagne buttercream. I love the subtle tint of pink in the icing from the pureed raspberries. sugar<\/li>\n<li><span data-amount=\"0.25\" data-unit=\"cup\">\u00bc cup<\/span> champagne (I used Korbel Sweet Rose)<\/li>\n<li><span data-amount=\"1\" data-unit=\"teaspoon\">1 teaspoon<\/span> vanilla<\/li>\n<\/ul>\n<p>For the Assembly:<\/p>\n<ul>\n<li><span data-amount=\"20\">20<\/span> additional fresh raspberries<\/li>\n<\/ul>\n<p><!--INSIDE_INGREDIENTS--><\/p>\n\t\t<\/div>\n\t\t<div class=\"tasty-recipes-cook-mode\">\n\t<div class=\"tasty-recipes-cook-mode__container\">\n\t\t<label class=\"tasty-recipes-cook-mode__switch\">\n\t\t\t<input type=\"checkbox\" id=\"tasty_recipes_6943fa87a6820_cookmode\">\n\t\t\t<span class=\"tasty-recipes-cook-mode__switch-slider tasty-recipes-cook-mode__switch-round\"\n\t\t\t\tdata-tasty-recipes-customization=\"button-color.background button-text-color.color\"><\/span>\n\t\t<\/label>\n\t\t<label for=\"tasty_recipes_6943fa87a6820_cookmode\">\n\t\t\t<span class=\"tasty-recipes-cook-mode__label\">Cook Mode<\/span>\n\t\t\t<span class=\"tasty-recipes-cook-mode__helper\">\n\t\t\t\tPrevent your screen from going dark\t\t\t<\/span>\n\t\t<\/label>\n\t<\/div>\n<\/div>\n\t<\/div>\n\n\t<div class=\"tasty-recipe-instructions\">\n\t\t<div class=\"tasty-recipes-instructions-header\">\n\t\t\t<h3 data-tasty-recipes-customization=\"h3-color.color h3-transform.text-transform\">Instructions<\/h3>\n\t\t\t\t\t<\/div>\n\t\t<div class=\"tasty-recipes-instructions-body\" data-tasty-recipes-customization=\"body-color.color\">\n\t\t\t<p>Make the Cupcakes:<\/p>\n<ol>\n<li id=\"instruction-step-1\">Preheat oven to 350 degrees and line muffin pans with cupcake liners.<\/li>\n<li id=\"instruction-step-2\">In a medium bowl, whisk together the flour, baking powder and salt. \u00a0 Set aside.<\/li>\n<li id=\"instruction-step-3\">In bowl of stand mixer fitted with the paddle attachment, beat the butter and sugar on medium speed\u00a04 minutes until light and fluffy.<\/li>\n<li id=\"instruction-step-4\">Add egg whites, one at a time, beating well after each addition and scraping down sides of bowl as needed.<\/li>\n<li id=\"instruction-step-5\">Add the vanilla extract and mix again.<\/li>\n<li id=\"instruction-step-6\">Gradually add the dry ingredients and the champagne, alternating, starting and ending with the dry ingredients. \u00a0Mix until just combined, being careful not to over mix. \u00a0Scrape down sides of bowl as necessary.<\/li>\n<li id=\"instruction-step-7\">Fill cupcake liners \u2154 full with batter.<\/li>\n<li id=\"instruction-step-8\">Bake for 18 minutes or until toothpick inserted in center comes out clean.<\/li>\n<li id=\"instruction-step-9\">Let cupcakes cool in pans for 5 minutes, then remove to wire racks to finish cooling.<\/li>\n<li id=\"instruction-step-10\">Once cupcake are completely cool, frost with Raspberry Champagne Buttercream.<\/li>\n<\/ol>\n<p>Make the Buttercream:<\/p>\n<ol>\n<li id=\"instruction-step-11\">In bowl of stand mixer fitted with the paddle attachment, beat butter until creamy.<\/li>\n<li id=\"instruction-step-12\">Add in raspberry puree and vanilla extract. \u00a0Mix well.<\/li>\n<li id=\"instruction-step-13\">Gradually add confectioner&#8217;s sugar, 1 cup at a time. \u00a0Mix and scrape down sides of bowl as necessary.<\/li>\n<li id=\"instruction-step-14\">Add champagne as necessary to create desired consistency.<\/li>\n<li id=\"instruction-step-15\">Place icing in piping bag fitted with large round tip and frost cupcakes.<\/li>\n<li id=\"instruction-step-16\">Garnish with a raspberry on top.<\/li>\n<\/ol>\n\t\t<\/div>\n\t<\/div>\n\n\n\n\n\n\n\n\n\n\n<\/div>\n<p>&nbsp;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-31359\" src=\"https:\/\/thecakeblog.com\/wp-content\/uploads\/2013\/02\/champagne_cupcake_8.jpg\" alt=\"Champagne &amp;
