Cupcakes"},"content":{"rendered":"<p>Tomorrow is St. Patrick&#8217;s Day, so I thought we&#8217;d squeeze in one last treat today!\u00a0 All decked out in green coffee mugs and topped with glimmering shamrocks, these cupcakes are a big drink of Irish fun!\u00a0 Chocolate cake is baked right in the mug and then topped with layers of whiskey-infused ganache and espresso buttercream.\u00a0 Chocolate drizzle and a <a href=\"https:\/\/blog.hwtm.com\/2012\/03\/diy-tutorial-leprechaun-hat-smores\/\" target=\"_blank\">glittering candy shamrock<\/a> finish the look!\u00a0 Grab your apron because we&#8217;re whipping up some <strong>Irish Coffee Cupakes<\/strong>!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"left\" alt=\"'Irish Coffee' Cupcake Recipe  |  TheCakeBlog.com\" src=\"https:\/\/thecakeblog.com\/wp-content\/uploads\/2012\/03\/irish-coffee_cupcake_1.jpg\" width=\"546\" height=\"800\" \/><\/p>\n<p>Funny thing is&#8230; I had an actual Irish Coffee <em>once<\/em>.\u00a0 While it looks like a fluffy cocktail, the Irish whiskey is actually quite strong!\u00a0 So let me assure you.\u00a0 This &#8220;Irish Coffee&#8221; cupcake looks fluffy and fun and tastes equally delicious.\u00a0 It&#8217;s really all about the coffee and chocolate flavors with a little Irish flair.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"left\" alt=\"'Irish Coffee' Cupcake Recipe  |  TheCakeBlog.com\" src=\"https:\/\/thecakeblog.com\/wp-content\/uploads\/2012\/03\/irish-coffee_cupcake-171.jpg\" width=\"546\" height=\"785\" \/><\/p>\n<p>I have to admit&#8230; I think these would be even cuter if baked in the clear, tall coffee mugs traditionally used for Irish Coffee.\u00a0 A clear glass would let you see all of the layers inside and look more like the original cocktail.\u00a0 But sometimes budgets win over style!\u00a0 The Irish Coffee mugs were $4 a piece while these green mugs were only $1.25 a piece.\u00a0 I also think this would be adorable baked up in a mini espresso cup and saucer!\u00a0 Maybe next year!<\/p>\n<p>Since I went with the green mugs, here&#8217;s a peek at what&#8217;s inside.\u00a0 Chocolate cake.\u00a0 Chocolate Whiskey Ganache.\u00a0 Espresso Buttercream&#8230;.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/thecakeblog.com\/wp-content\/uploads\/2012\/03\/irish-coffee_cupcake1.jpg\" alt=\"&#039;Irish Coffee&#039; Cupcake Recipe  |  TheCakeBlog.com\" width=\"546\" height=\"818\" class=\"left\" \/><\/p>\n<p>Even if you don&#8217;t have the chance to make these for St. Patty&#8217;s Day, I still hope you give this recipe a try!\u00a0 Simply swap out the color of the mug and trade the shamrock for a chocolate covered espresso been&#8230;. you&#8217;ll have delicious Cafe Mocha Cupcakes!\u00a0 Yum!\u00a0 Let&#8217;s grab a spoon&#8230;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"left\" alt=\"'Irish Coffee' Cupcake Recipe  |  TheCakeBlog.com\" src=\"https:\/\/thecakeblog.com\/wp-content\/uploads\/2012\/03\/irish-coffee_cupcake-16b1.jpg\" width=\"546\" height=\"418\" \/><\/p>\n<p><strong>Irish Coffee Cupcakes<\/strong><br \/>\nChocolate Cake (baked from scratch or made from a mix)<br \/>\nOven Safe Coffee Mugs<br \/>\nEspresso Buttercream<br \/>\nChocolate Whiskey Ganache<br \/>\nGlittering Shamrocks (<a href=\"https:\/\/blog.hwtm.com\/2012\/03\/diy-tutorial-leprechaun-hat-smores\/\" target=\"_blank\">find my DIY here<\/a>)<strong><\/strong><\/p>\n<p><strong>Chocolate Cake:<\/strong><br \/>\nMake your favorite chocolate cake recipe as normal.\u00a0 Place coffee mugs on a lined baking sheet and spray with non-stick cooking spray.\u00a0 Fill half way with batter.\u00a0 Bake at regular heat for slightly longer than normal for a cupcake.\u00a0 I baked mine at 350 for 25 &#8211; 30 minutes.\u00a0 Total baking time will vary based on the size of your mug.\u00a0 Cupcakes are done when a toothpick comes out <em>almost<\/em> clean.\u00a0 Let cool but do not remove cake from mugs.<\/p>\n<p><strong>Espresso Buttercream<\/strong><br \/>\n2 sticks of unsalted butter<br \/>\n2 tsp vanilla extract<br \/>\n1\/4 cup cooled espresso<br \/>\n1\/4 tsp salt<br \/>\n4 cups powdered sugar<\/p>\n<ol>\n<li>In a measuring cup, mix together vanilla extract, espresso and salt.\u00a0 Stir to dissolve salt.<\/li>\n<li>Using an electric mixer fitted with a paddle attachment, combine butter, liquid mixture and roughly 1 cup of powdered sugar.\u00a0 Beat on medium until well blended with no visible lumps.\u00a0 (I always error on more mixing than less, to avoid grainy icing.)\u00a0 Scrape down sides of bowl.<\/li>\n<li>Add another cup of sugar and beat well.\u00a0 Scrape down sides of bowl.\u00a0 Repeat until all remaining sugar has been added.\u00a0 Beat until well combined.<\/li>\n<\/ol>\n<p><strong>Chocolate Whiskey Ganache<\/strong><br \/>\n1 cup heavy whipping cream<br \/>\n12 oz chocolate chips<br \/>\n1 T whiskey (optional &#8211; substitute espresso or omit, if desired)<\/p>\n<ol>\n<li>Heat cream in saucepan on stove on med-high until almost boiling.\u00a0 Remove from heat.<\/li>\n<li>Pour cream over chocolate chips in a medium sized bowl.\u00a0 Let rest for a few minutes while the hot cream melts the chocolate.<\/li>\n<li>Stir, stir, stir until all chocolate has melted and ganache is smooth and shiny.\u00a0 (If small bits of unmelted chocolate remain, pop bowl into microwave for 30 seconds at 50% power.\u00a0 Stir and repeat until completely melted and smooth.)<\/li>\n<li>Add whiskey and stir, if using.<\/li>\n<li>Let cool slightly before assembling cupcakes.<\/li>\n<\/ol>\n<p><strong>To Assemble<\/strong><\/p>\n<ol>\n<li>Once cupcakes have cooled completely, spoon a layer of chocolate ganache into each mug.<\/li>\n<li>Pipe espresso buttercream on top, using a pastry bag fitted with a #1M tip.\u00a0 Start in the center and swirl outward in a circle to cover cup.\u00a0 Do a second swirl, this time, starting on the outside and moving upward and in, to create a nice mound.<\/li>\n<li>Drizzle additional chocolate ganache on top of buttercream.\u00a0 I used a pastry bag fitted with a #1 tip and followed with swirl of the buttercream.<\/li>\n<li>Place candy shamrock on top.\u00a0 Enjoy with a spoon!<\/li>\n<\/ol>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"left\" alt=\"'Irish Coffee' Cupcake Recipe  |  TheCakeBlog.com\" src=\"https:\/\/thecakeblog.com\/wp-content\/uploads\/2012\/03\/irish-coffee_cupcake-9b.jpg\" width=\"546\" height=\"816\" \/><\/p>\n<p>Whether you bake these up tonight to add something sweet and green to your St. Patty&#8217;s Day&#8230;
